Themed Culinary Experience: Mardi Gras in Houston
When our client who was searching for luxury event catering in Houston approached us to plan a 20th-anniversary event, we knew we wanted to create an unforgettable atmosphere.
Their Mardi Gras theme paired perfectly with the iconic setting of The Astorian, so we focused on creating a menu that would elevate the theme to the high-class sophistication of New Orleans elite celebrations.
As hors d’oeuvres were passed, the aroma of Cajun spices filled the air as the guests savored fried green tomatoes with corn relish, baked creole sausage balls with remoulade sauce, miniature crawfish pies with creole tomato sauce, and shrimp and grits. To accompany the elevated bites, butlers served hurricanes to add another nod to the New Orleans theme.
For the first course, succulent Cajun Blackened Jumbo Shrimp grilled to perfection was served atop a bed of smoky Grilled Corn Maque Choux Salad. That was followed by an entrée of Blackened Striped Bass with creamy Creole Contessa and Cajun Scallop Potatoes. And to top off the night, for dessert, a take on a New Orleans Classic: Flaky Croissant Bread Pudding with Bourbon Caramel Rum Sauce.
